Blogmas Day 20: Baking Peanut Blossom Cookies

Hello Friends,

I hope you are doing well. Tonight I  made some Peanut Blossom Cookies to take to work tomorrow. It is the last day that most people will be at work before the holidays, so I wanted to make cookies for the team and give them as a gift. They turned out so delicious! Liam and I tried them and he said they were really good, so they passed the test! I am so happy with how they taste and look. They are a bit crumbly, but I think as they cool down they hold together better. I found the recipe off of a blog called Chocolate with Grace you can find the recipe here.

The cookies were so fun to make. I enjoy trying out new cookies and treats at this time of the year. I have a feeling this recipe will be a favourite to have in our home around Christmas as we both love them!  Please join me again for blogmas tomorrow for day 21!

Baking Vegan Banana Bread From Oh She Glows

Hello Friends,

I hope you are doing well. I baked some vegan banana bread this week using the vegan banana bread recipe from Oh She Glows. It has been on my list of things to bake for a long time. I took a look at my overripe bananas on Tuesday morning and decided once and for all it was time to bake the bread. It was so delicious and I really enjoyed eating it all week with my coffee or tea in the afternoon. My boyfriend also really liked it and I also shared some with him.






I got all of my ingredients ready for a photo. All you will need for the recipe is:
Wet ingredients: bananas, almond milk, melted coconut oil, maple syrup, vanilla extract, ground flax seeds.
Dry ingredients: rolled oats, flour (any kind you would like, gluten free, spelt flour etc. I used the regular kind), raw cane sugar/brown sugar ( or you can use coconut sugar), baking powder, baking soda, walnuts (for ontop of the banana bread).  Mix the wet ingredients first, then mix in the dry ingredients afterwards.

I can't wait to try out more of her recipes. I have her cookbook and have tried making some of her meals and really love them and I am making one tonight.

I have been knitting the front piece of the Wool and the Gang Farrah Billie Jean top and also knitting another pair of Ribbed Fingerless Mitts, pattern by Kathy North, for a customer. I will keep on knitting these this weekend and be able to give them to her by next weekend. What will you be working on this weekend?

Weekend Knitting and Baking

Hello Friends,

I hope you are all doing well. This weekend I baked some vegan brownies and started knitting fingerless gloves after searching for patterns on Ravelry. Last night we had my boyfriend's sister and her boyfriend over for a pizza and board games night. It was a fun night and it is always so fun to have them over. Today my boyfriend and I had a relaxing day in and I caught up on my knitting and then we had a lovely dinner later with his mom.

I have started knitting the fingerless gloves today and really looking forward to seeing how they take shape as I knit on. I am using the pattern Ribbed Fingerless Mitts pattern by Kathy North which I found on Ravelry. The yarn I am using is the Allegria Grande yarn by Manos Del Uruguay which is worsted weight yarn and I am using size US 8 5 mm needles. This is the first time I have knitted fingerless gloves and have not really knitted many gloves yet. I am looking forward to wearing these gloves once they are done so I can always have my fingers free and also keep my hands warm in the gloves. I once owned a pair of fingerless gloves when I worked with children at a childcare center and it was easier for me to have my fingers free and be able to still use my fingers for zipping up little zippers and any other things I had to do quickly.

I finished knitting that secret hat project for my mom and looking forward to giving it to her in February for her birthday. She chose such a lovely bulky green yarn and it was so fun to knit with because it was soft and also knitted up quickly because of its bulky size.  I am looking forward to sharing photos of the finished hat with you soon.

Yesterday I was baking some vegan brownies and I used the Dolled Up Desserts Bettie's Brownie mix. My sister bought the mix for me for Christmas and I was looking forward to trying them out! I just added coconut oil and maple syrup and the bag of ground flax seeds they provided in the bag. They are so delicious! It was nice to have a brownie which wasn't too sweet and rich and also felt a bit guilt-free because you aren't adding tons of butter as you usually would.

I hope you all had a good weekend too and had some time to knit or crochet as well. This week I will be working on knitting the Wool and the Gang Farrah Billie Jean top and the fingerless gloves. I am also almost finished reading a couple of books so I will be working on reading more to finish them up.

Knitting, Baking, and Donating

Hello friends,

I hope you are all doing well and had a wonderful weekend. Happy first day of Spring! I finished the infinity scarf and it ended up being 60 inches long in order to wrap around twice. I have loved working with this soft, chunky in this deep navy blue color. The yarn is Lion Brand Wool-Ease Thick & Quick and I used size US 13 needles.

On Thursday last week, I baked banana bread. It seemed like the perfect day to make it, my boyfriend was sick and I thought this would make him feel better. The Betty Crocker mix was delicious, my boyfriend and I went back for seconds. It was so soft on the inside and crunchy on the outside and so warm and comforting when it first came out of the oven.  I will definitely be making this one again!





I have been knitting the front piece of the sweater, it is getting longer. I will share the sweater progress on my Wednesday post. I knitted a bit more of the sock and I am enjoying how the yarn makes a pattern on the sock and is changing colors it makes it more interesting to knit up. I know the socks will probably look different too making them unique.

I donated blood on Saturday morning for the first time. I have wanted to donate for a long time. It was fun going with my sister and some other people we know. It feels good to give back and I feel like the blood I donated will make a difference in someone's life. I felt tired the next couple of days but now I am feeling more rested and energetic.  I was given the sticker below to wear while I was there because it was my first time donating, I thought it was cute, people should get these stickers when starting anything new... be nice to me!



I got this plant and pot as a gift from my boyfriend's father and step mother yesterday, I love it! Another plant to add to the growing collection! I am up to nine plants now.  I have one of those Ecocube flower kits I will start once it is warmer that I got for a gift at Christmas so I will have ten plants in the apartment!

Last week before Christmas day!

Hello Friends,

I cannot believe that this is the final week before Christmas! there is not much more time to rush around and shop for loved ones. I am almost done knitting the last Christmas gift for my dad I just have maybe a couple of days work left. until I finish it and I had to buy another skein of yarn today to finish it up. Today I went to the mall with my boyfriend and I am happy to say that I have finally finished my Christmas shopping! I might have a couple little things for stockings I might want to buy but the main gifts are purchased. I feel lighter now that I am finished. Last night I settled in with some tea by the Christmas tree and was catching up on some reading. Lately my boyfriend and I have been sipping tea in the evenings to warm up after being out in the cold.


I made these "pretzel hugs" today, we had tried them out last week and my boyfriend and I loved them! I followed the recipe from the blog Sally's Baking Addiction.  They are so easy to make. You just need pretzels, Hershey Kisses (I used candy cane), and M&M candies. I set the oven at 250 degrees and then they melted, you put an M&M on top of each pretzel, then you pop them into the fridge to cool down for 10 mins. I am excited to continue on with my sweater I started some time ago. Here is the progress so far on the back piece! I will be making regular posts about my progress on the sweater in the new year. Stay tuned...

Chocolate is a girl's best friend

Hello Friends,


 I have been busy with job applications all last week.  I am currently looking to get another job that gives me more job satisfaction and a higher salary J  I applied to a childcare center that looks amazing and I applied to the school board in my region.  Fingers crossed I find something that is right for me !

Today I have been cleaning, cleaning, cleaning my room and picking clothes that I want to give away to the Salvation army.  It was an all day job but I really got a lot done and my room is looking great J

Today I made delicious Belgian chocolate squares from a President’s Choice mix my sister got me for Christmas.    It is really simple, all you need is the mix, eggs, vegetable oil, and water.   I watched a Sex and the City episode while I waited for them to finish baking, so it was a pretty good afternoon. (Chocolate + Sex and the City= fabulous)
They taste as good as they look.


I will be baking more and cooking more so I will be posting more recipes and products in the future :)
